Every boss in Ocarina of Time has one item that breaks it: slingshot for Gohma, bombs for King Dodongo, boomerang for Barinade, the Longshot for Morpha, and Light Arrows + the Master Sword for Ganondorf. Z-target, hit the weak point with the right item to stun, then slash. The full per-boss breakdown — all 17 bosses and mini-bosses — is below.
The final fight is two halves. Ganondorf in the tower is beaten with Light Arrows + the Master Sword; the transformed Ganon outside knocks the Master Sword away, so you finish him with Biggoron's Sword or the Megaton Hammer on his tail. This is Ocarina of Time specifically — other Zelda games handle Ganondorf differently.

Block its overhead and thrust attacks with your shield, then counter with sword slashes or a back-slice when it leaves an opening; the Forest Temple pits you against two at once.

Frequently Asked Questions
How do I beat Ganondorf in Ocarina of Time?
Deflect his energy ball back and forth with your sword (or a Light Arrow) until it hits him, then fire a Light Arrow to stun him and rush in for Master Sword strikes. Use the Hover Boots and corner blocks to dodge his shockwaves.
How do I beat Morpha?
Target the red nucleus moving inside the water tentacle and grab it with the Longshot to yank it onto dry ground, then slash it before it dives back in. Fight from a corner so it can only attack from limited angles.
Can I beat Ganon without magic?
Yes — the final Ganon fight needs no magic. You strike his glowing tail with Biggoron’s Sword or the Megaton Hammer after rolling between his legs, then land the finishing blow with the Master Sword once Zelda holds him.
What item do I need for the Shadow Temple boss?
Bongo Bongo requires the Lens of Truth to see him and the Fairy Bow to stun his hands and shoot his eye.
